The pattern
Zou is the past tense of zullen, and it means "would". Use zou, or zouden with a plural subject, plus an infinitive at the end of the clause.
- Forms: ik, jij, u, hij, zij zou; wij, jullie, zij zouden. In modern Dutch, jij and u get no extra -t.
- Word order: in a statement, zou is the second element and the infinitive goes last. In a question, zou comes first. In a subordinate clause, both verbs go to the end: Je zei dat je zou bellen. See the verb bracket.
- Polite wishes and requests: Ik zou graag ... (you can add willen: Ik zou graag een kamer willen reserveren) and Zou je ... kunnen ...?
- Hypothetical (imagined) situations: als with the simple past, then zou in the main clause. Als ik meer tijd zou hebben is also correct, just heavier. For "would have", see the unreal past.
- Advice: Ik zou ... means "if I were you". Je zou ... moeten means "you should".
- News: zou marks a claim, not a fact. For the past, add a perfect infinitive (past participle plus hebben or zijn). If you know German, this is "soll". Dutch moet here would mean "must have".

Why it works this way
Think of zou as _zullen_ taking one step back. A past form creates distance, and Dutch uses that distance in four ways. It can step back in time (je zei dat je zou komen) or away from reality (als ik tijd had). It can step away from bluntness: Zou je ...? sounds softer than Kun je ...?. And it can step away from responsibility: a journalist who writes zou is saying "others claim this, I can't confirm it yet".
English "would" works in much the same way, which is good news for you. One difference: English also uses "would" for past habits ("every Sunday we would visit Grandma"). Dutch uses the simple past for that: Elke zondag gingen we bij oma langs.
Remember: zou is zullen one step back, from now, from reality, from bluntness or from the facts.
