The pattern
After iets, niets, veel, weinig, wat and genoeg, an adjective with no noun after it takes -s, unless it already ends in -s.
- Add only -s. The spelling of the adjective does not change: groot gives iets groots, lief gives iets liefs, bijzonder gives niets bijzonders.
- Adjectives that already end in -s or -sch add nothing: iets fris, iets Nederlands, iets praktisch.
- Genoeg triggers the -s only when it comes before the adjective: genoeg leuks (plenty of fun things), but groot genoeg (big enough).
- Comparatives (the -er forms, like bigger) take -s too: iets beters, niets mooiers. See Comparatives: groter, mooier, duurder.
- Informal niks works like niets (niks bijzonders), and so does allerlei (all kinds of): allerlei lekkers.
- A word like heel or echt before the adjective stays unchanged: iets heel leuks.
- With a noun after it, there is no -s and the normal adjective-ending rules apply: veel mooie foto's, but veel lekker eten (eten is a het-word). See Adjective endings: when to add -e.

Why it works this way
Think of the -s as a label that turns the adjective into stuff. Iets leuks is "something of the nice kind", and veel moois is "a lot of beautiful stuff". The traditional name is the partitive genitive (a form meaning "part of"): the -s is a leftover of the old genitive ending, which meant roughly "of". You already know one word built this way: iets anders (something else) is ander plus -s. More in Ander, andere and anders.
This also tells you when the -s stays away. Iets, wat and veel can also say how much of a quality something has: a bit, much. Then the adjective simply describes something; it is not stuff, so there is no -s.
- Heeft u iets groters? (Do you have something bigger?) versus Deze jas is iets groter. (This coat is a bit bigger.)
- Wil je wat lekkers? (Would you like something tasty?) versus De soep is wat zout. (The soup is a bit salty.)
- Er is hier veel moois. (There is a lot of beautiful stuff here.) versus Het is hier veel mooier. (It is much nicer here.)
English speakers say "something nice" and write iets leuk. German speakers, used to "etwas Neues", may write iets nieuwe. Dutch wants neither: just -s.
Remember: if the adjective is the thing, add -s (iets groters). If it says how something is, leave it bare (iets groter).

On Monday, when a colleague asks Hoe was je weekend?, answer with this pattern: Niets bijzonders, or better, Ik heb iets leuks gedaan, followed by what you did. Then write one sentence about your town with veel moois or genoeg leuks te doen.
