The pattern
Uncountable nouns take no een and no plural. To give an amount, put a measure word (a word for an amount, a container or a piece) directly before the noun, with no van in between.
- Typical uncountable nouns: geld, water, melk, kaas, tijd, werk, informatie, nieuws, huiswerk. They often have no article at all: Ik drink water. More in When Dutch uses no article.
- In the negative, use geen, just like with countable nouns: Ik heb geen tijd. See Geen or niet?
- Measure word plus noun: een glas water, een kilo appels, een stuk kaas, een pak melk.
- Units such as kilo, liter, gram and euro normally stay singular after a number: twee kilo appels. Containers and pieces do get a plural: twee glazen water, drie stukken kaas.
- Veel and weinig work with both kinds: veel geld, veel fietsen.
- Use van when you mean part of a whole thing, such as een stuk van de taart (a piece of the cake), or when you give a size: een fles van een liter (a one-litre bottle).

Why it works this way
Think of it as things versus stuff. Things come in units: a bike, a neighbour, an apple. Stuff is a mass: water, money, cheese, time. Stuff has no natural unit, so you count a container or a piece instead: twee glazen water. English and Spanish speakers are tempted to add van here, but Dutch glues the measure word and the noun together as one block.
Remember: English already says a dozen eggs and a million people, never a dozen of eggs. Dutch treats measure words like dozen: een kilo appels, een kopje thee.
English has to choose between much and many, little and few, less and fewer. Dutch does not care: veel, weinig, meer and minder work with both kinds. For small amounts, see Veel, weinig, een paar, een beetje.
Countability is a habit of the language, not a fact about the world. A chair is easy to count, yet English calls chairs and tables furniture. Dutch usually says meubels: een meubel, twee meubels. Advice works the same way: you can give een advies or twee adviezen. At the bakery, een brood is simply a loaf.
It also works the other way round. Speelgoed (toys) and snoep (sweets) are uncountable in Dutch: one toy is een stuk speelgoed, one sweet is een snoepje. And informatie never has a plural, even if it does in your own language. Food words can get a plural when you mean kinds, just like in English: Nederlandse kazen (Dutch cheeses).
